A New Best Friend?

You all know about my latest obsession with nutella, well I recently fell in love with another one of the lovely Katie‘s recipes

One-Minute Chocolate Cake I was craving chocolate like crazy last night and I knew that I wouldn’t be able to suppress it for much longer. So I searched the internet for something fast and easy and this baby popped up. I tweaked the recipe to my liking, enter a load of cinnamon added in before microwaving.

The only thing that made the cake better was a scoop of some freshly made nutella that I made earlier that day. Seriously, nutella makes everything better.

Katie‘s recipes are suddenly becoming my go-to for quick craving fixes.

WIAW #20 – Almost Wordless Edition

Happy WIAW everybody!

I can’t believe this is my 20th edition, time is flying by!

I’m writing this write before school which means I don’t have a lot of time so I’m gonna get right to it!

This is how my morning started out. Yes I dropped the oatmeal everywhere, yes it burnt my foot, and yes it hurt. A lot!

Eww for Mondays.

Not the most positive way to start off this post, but necessary cause that is how I am feeling right now.

How was everyone’s weekend? Mine consisted off work, work, and some more work. It kinda sucks working all the time, it feels like I never have time for myself anymore. But one thing that made my weekend so much better.

Welcome to the world little Dylan Joseph. My friend just recently had a baby and her entire family came in from out of town so that we could meet him. He is honestly the cutest little baby I have ever met, and no I am not biased at all. He didn’t cry once the entire five hours he was at our house, to say I was surprised is an understatement.

Eats this weekend have been new and exciting.

Spaghetti squash topped with marinara sauce and meatless meatballs. If you have never tried spaghetti squash, you must go to the store right now and get one! Seriously, it will change your life!

Banana topped with homemade nutella. You guys are probably going to get sick of me talking about Katie’s nutella but I can’t help it, it’s life changing. For a person who has never been able to eat a nut butter because they can’t stand the taste, this stuff is heaven. I’ve already made my third batch. Yea I’m obsessed and no I don’t want rehab.

The Vitalicious company was gracious enough to send me some of their new Banana Choco Chip vitatops to try. I’ve previously tasted their Deep Chocolate and they were an instant fav. So I had high hopes for this new flavor.

First thought; I’m in love! Chocolate and bananas go together like me and Patrick Swayze. Alright maybe that wasn’t the best analogy ever but you get what I mean. The Vitalicous company really out did themselves with these bad boys.

One thing that I hate about banana products is the lack of a banana-y flavor, not with these babies though. You can honestly taste banana in ever single bite.

They’re even good on top of oatmeal! But by far my favorite way to eat them is just toasted.

Why I Chose Vegetarianism

Hello my loves.

I bet you all thought I disappeared again, huh? Probably rejoicing too? Well, I’m still here and kickin’. I didn’t post a WIAW this week because my computer crashed. Like flat out deleted everything I had. The 1157 songs on my iTunes and all. It’s a good thing my dad works on computers and got my little baby up and running in no time.

I promised you guys a post on why I chose to go vegetarian and what is in my diet now so here it is.

1. Following a vegetarian diet lowers your risk for type 2 diabetes. Growing up in a family that has diabetes on both sides, I’m very aware of the fact that I’m a likely candidate. The only person who doesn’t have it out of both sides is my mom. I’m very aware of the fact that the odds are against me in this battle but I would like to increase my chances of not getting diabetes.

2. It’s good for my heart. By following a vegetarian diet I almost automatically lower the amount of saturated fat and cholesterol that I consume. Along with diabetes, heart disease also runs in my family. So basically I’m knocking out two birds with one stone.

3.I have more energy! I absolutely love the way that I feel right now. I’m constantly moving around and it feels amazing. Before I developed my ED my diet was based off of grains (not very good ones either) and beef. I could eat 10 oz steak for dinner along with two sides of fries and I would be good. Then I’d go in a food coma. While that may be okay every now and then, I would do that a couple nights a week. Needless to say, I didn’t always feel the best.

4.Most importantly, I love animals. For as long as I can remember, I have loved animals and have always wanted to follow a vegetarian diet purely for the fact that I felt extremely guilty eating them. Since I’m still seeing a dietitian I thought this would be the perfect time to change my diet because she would be able to monitor/change it as needed.

Katie’s nutella pretty much goes on everything!

As you can see, my eats haven’t changed that much and I can honestly say that I don’t miss meat one bit at this moment.

WIAW #19 – Not Much Has Changed

Happy Wednesday loves!

Since it’s Wednesday, you know what that means! Time for the little party of WIAW or Tuesday in this case. As always, thanks to Jenn for hosting this amazing party!

Even though I took a little break from the blogging world, my food choices haven’t changed that much. Although, I did take out all the meat and replaced it with new protein source, don’t worry you’ll get a full update on my vegetarian ways soon.

Breakfast consisted of a bowl of strawberries, Greek Yogurt, and a cup of coffee. Insert hair styling and make up time. Then I completed my breakfast with a simple bowl of pumpkin oats and a scoop of my homemade nutella! By far the most amazing add in to oatmeal!

Lunch accidentally went unpictured, but it was an apple, banana, half a pita with some nutella, and some baby carrots.

My Wednesday wouldn’t be complete without a cottage cheese mess and a homemade pumpkin-raisin muffin.

Dinner was lentil soup, cereal, another muffin, a banana, and new-to-me spaghetti squash covered in vegetarian marinara.
